Servings
Ingredients
1 Cauliflower, head, large, 6" - 7", fresh , cut and steamed until tender
1 pinch paprika
1 pinch chopped parsley

Cheddar Sauce
2 tbsp minced onion
1 tbsp margarine
2 tbsp white all purpose flour
1 cup fat free milk
0.5 cup low fat cheddar cheese, shredded
0.25 tsp dry mustard
2 pinch hot pepper sauce (2 to 3 drops)
1 pinch salt
1 pinch white pepper


Directions
1 Cook onion in melted margarine 2 to 3 minutes.
2 Mix in flour and cook medium low heat, stirring continually for 1 minute.
3 Mix in milk and bring to a boil, whisking continually 1 minute or until thick.
4 Lower heat to low. Mix in cheese, mustard, and pepper, whisking until cheese is melted. Sprinkle with salt and pepper.
5 Pour cheese sauce onto steamed cauliflower, top with parsley and serve.
Additional Information
Havarti, Gruyere, American, or blue can be used for different flavors.
