1 Preheat the oven to 350°F. 2 In medium saucepan, add cauliflower and water and bring to boil. Cover, reduce heat, and simmer 8 to 10 minutes or until crisp-tender; drain. 3 Coat 1-quart baking dish with cooking spray. Place cauliflower in dish and set aside. 4 In small, heavy saucepan melt butter over medium heat. 5 In measuring cup, whisk arrowroot into milk. 6 Gradually add milk to saucepan, stirring constantly. Cook, stirring constantly, 5-8 minutes or until thickened and bubbly. 7 Remove from heat; add 1/2 cup cheese, stirring until cheese melts. 8 Pour cheese mixture over cauliflower, toss to coat. Sprinkle remaining 1/4 cup cheese and paprika over casserole. 9 Bake, uncovered, for 15 to 20 minutes or until top is golden. Sprinkle with parsley.
Additional Information
This is so delicious! The sauce is a little thin, but is perfect for getting in all the nooks and crannies of the cauliflower. Add a little more cheese if you like a thicker sauce. I also tried this on steamed broccoli and it was wonderful!
