3 lb fresh cauliflower , 1 large head
1 medium garlic cloves
1 fresh leeks , white only, split in 4 pieces
2 tbsp unsalted butter
1 pinch black pepper (to taste)
1 pinch salt , to taste (optional)
0.5 cup cold water


Directions
1 Cut cauliflower into small segments.
2 In large saucepan over medium heat add water. Place cauliflower, garlic, and sliced leek into steamer basket and steam until completely tender, approximately 20 - 30 minutes.
3 In food process puree mixture, while still hot, to consistency of mashed potatoes.
4 Stir in butter. (For a smoother texture, blender can be used after butter is added).
5 Add hot water as needed if mixture seems dry.
6 Season with salt (if desired) and pepper to taste.
