Ingredients
0.5 tbsp Shortening, vegetable
1.5 lb Pork, tenderloin, lean, raw , cubed (or some other kind of stew meat)
1 medium onions , chopped
14.5 oz Tomatoes, stewed, unsalted, canned
2 whole jalapeno pepper , fresh, seeded, and diced
2 fresh tomatoes , chopped
0.5 tsp ground cumin
1 medium garlic cloves , minced
1 pinch salt and pepper (to taste)


Directions
1 Melt the shortening in a large saucepan over medium-high heat. Add the meat and brown well on all sides.
2 Add the onions and saute for 5 minutes, or until tender.
3 Add the canned tomatoes, jalapeno chile peppers, fresh tomatoes, cumin, garlic, and salt and pepper to taste.
4 Reduce heat to low, cover and simmer for 30 minutes to 1 hour, or until meat is tender. (If mixture is too thick, add water as needed. Or if mixture is too thin, combine some cornstarch and water and add to thicken.)
Additional Information
Perfect served in corn or flour tortillas.
