Ingredients
1 Cucumber, fresh, medium , peeled, seeded, and diced
0.5 tsp sliced jalapeno pepper
1 tbsp fresh lemon juice
1 tbsp fresh lime juice
2 tsp brown sugar
2 tbsp Coconut, dried, unsulfured, unsweetened, shredded
1 fresh mango , peeled and diced
1 small red bell peppers , minced
1 pinch fresh cilantro , chopped (or spearmint leaves)


Directions
1 In a large bowl, combine the cucumber, chile, lemon and lime juice, brown sugar, coconut, mango, and bell pepper. Toss well.
2 Cover and chill for at least 15 minutes and serve cold or at room temperature. Just before serving, top with cilantro or spearmint.
Additional Information
This salad can be a side dish or a great salsa.
