Ingredients
1 cooking spray
2.5 cup oat bran , uncooked
2 cup white all purpose flour
2 tsp low sodium baking powder
1.5 tsp baking soda
1 tsp cardamom, ground
2 cup unsweetened applesauce
4 egg whites
0.5 cup pineapple juice
0.5 cup honey
2 tbsp vegetable oil
0.25 tsp almond extract
0.25 cup lemon zest (equal to the grated zest of 1 lemon)


Directions
1 Preheat the oven to 400 degrees F; then lightly spray two 12-cup muffin pans with vegetable oil spray or use paper bake cups.
2 Combine the oat bran, flour, baking powder, baking soda, and cardamom in a medium bowl.
3 Stir together the remaining ingredients in a large bowl; then stir the dry mixture into the wet mixture until just moistened (batter should be lumpy).
4 Fill the prepared muffin cups to almost full; then put in the oven and reduce the heat to 375 degrees F.
5 Bake for 18-20 min, or until golden-brown; then serve warm or at room temperature.
