Directions
1 Preheat oven to 325°F.
2 Coat a 11" x 13" nonstick pan with cooking spray and set aside.
3 In large bowl, place popcorn and set aside.
4 In small bowl, whisk egg white, molasses, vanilla extract, salt and Splenda until well mixed. Add peanuts and stir until well until coated.
5 Pour egg mixture over popcorn. Toss until popcorn is well coated.
6 Place in prepared baking pan. Bake 20 to 25 minutes, stirring occasionally, until mix is crispy.
7 Remove mix from oven and spread onto parchment or waxed paper to cool. Cool to room temperature before serving.
Additional Information
If desired, for added flavor, drizzle melted dark chocolate over mix after it has cooled. Allow chocolate to harden.
