Ingredients
1 cooking spray
2 oz Canadian bacon , cut into 1/4-inch pieces
0.33 cup yellow cornmeal
0.67 cup cold water
1 tbsp margarine
1 eggs , beaten
0.33 cup whole milk


Directions
1 Preheat oven to 425°F. Coat 1-3/4 cup baking dish with cooking spray. Set aside.
2 Coat medium skillet with cooking spray. Sauté bacon for 2 minutes over high heat.
3 In small saucepan, place cornmeal and water, and bring to boil. Cook 1 minute, remove from heat.
4 Add to cornmeal and mix after each additional, in this order: margarine, egg, and milk.
5 Add bacon and pour into prepared baking dish. Bake 15 minutes or until the edges are browned.
Additional Information
Do not use regular bacon.
