Ingredients
2 tsp creole seasoning (salt free)
0.75 tsp Salt Substitute, no sodium , divided
4 whole loin lean pork chops , about 1/2 inch thick (about 4 oz. each), trimmed of all visible fat
1 cooking spray
1 cup Rice, jasmine, dry
14.5 floz low fat unsalted chicken broth
10 oz frozen cut green beans , thawed and drained (or mixed vegetables )


Directions
1 Season pork chops with 1 teaspoon Cajun seasoning and 1/2 teaspoon salt.
2 Lightly spray a large nonstick pan with vegetable cooking spray and heat over medium heat. Add in pork chops and cook until barely pink in the center, about 3 to 4 minutes per side. Remove pork and set aside.
3 Add the rice, remaining teaspoon of Cajun seasoning, 1/4 teaspoon of salt, and broth, bring to a boil.
4 Lower heat, cover, and simmer for 15 minutes. Add in the green beans, place pork chops on top. Simmer, covered until all of the liquid is absorbed and pork is no longer pink, about 8 minutes.
Additional Information
If you can't find salt free Cajun or Creole seasoning make your own by combining 1 tablespoon of each: chili powder, ground cumin, garlic powder, onion powder, and paprika. Store in an airtight container for about 6 months.
