A fire roasted herbed, spicy eggplant.

Servings

1 Cooking Spray, canola, with butter flavor, 1/3 sec spray
1 whole eggplant , cut into 1/2-inch slices

Cajun Seasoning
2 tsp paprika
1 tsp onion powder
1 tsp garlic powder
0.5 tsp thyme, leaves, ground
0.5 tsp oregano leaves
0.5 tsp ground cayenne (red pepper)
0.5 tsp black pepper
0.25 tsp salt

1 Coat both sides of eggplant with cooking spray and season with Cajun seasoning.
2 Grill eggplant over medium heat 5 minutes per side.
Cajun Seasoning
1 Mix together all ingredients and store in an air-tight container until ready to use.

Eggplant can also be roasted in oven at 425 degrees F for 30 minutes. Spice blend works great on any vegetable.
