Directions
1 Preheat oven to 375°F. Coat baking sheet with cooking spray.
2 In small bowl, Cajun and poultry seasonings. Sprinkle evenly over both sides of the chicken breasts.
3 Place on prepared baking sheet. Bake 25-30 minutes, until juices run clear.
4 In small bowl, whisk oil, lemon juice, broth or water, sour cream, mustard, hot sauce, and Parmesan cheese.
5 Wash and tear lettuce into large pieces. Place in large bowl, add dressing and toss to coat evenly.
6 Divide the lettuce between 8 salad plates. Slice chicken into strips and place on top of lettuce.
