Directions
1 Preheat broiler. Coat a baking sheet with cooking spray and set aside.
2 To make Cajun seasoning, combine paprika, oregano, salt, garlic powder, black, red, and white pepper in a zip - top plastic bag and shake well.
3 Baste both sides of the catfish with lemon juice and rub with Cajun seasoning.
4 Lay fish on prepared baking sheet and place under broiler. Cook for 5 minutes on each side, or until fish is flaky.
5 Move to a serving platter and garnish with lemon wedges if using.
Additional Information
Try cutting the catfish into bite-sized pieces and using as an appetizer. Cajun seasoning will last a while and is super versatile. It is a great seasoning for pork, chicken, vegetables or to make your own spicy croutons.
