Ingredients
1.5 lb whole loin lean pork chops , cubed (boneless)
4 medium carrots , peeled and diced
1.5 tbsp vegetable oil
0.75 cup red wine (dry)
2 tsp fresh thyme (or 1 teaspoon dried)
1 tsp salt
1 tsp garlic powder
0.5 tsp black pepper
14.5 oz canned unsalted diced tomatoes
1 cup fresh chopped celery
0.33 cup golden raisins


Directions
1 Brown pork in oil. Stir in wine and seasonings. Simmer covered for 45-60 minutes or until pork is tender.
2 Stir in tomato, celery, and raisins; simmer an additional 15 minutes.
