6 oz Pork, ham, whole, lean, raw , diced (3/4 cup)
1.5 cup liquid egg substitute
0.5 cup Cheese, monterey jack, shredded (plain or with jalapeno pepper)
4 whole wheat tortillas (8-inch rounds)
4 oz Sauce, picante (optional)


Directions
1 Preheat a large non-stick skillet over medium-high heat and coat with cooking spray.
2 Add the ham and cook, covered, for about 2 minutes, stirring once or twice, until the ham is hot and beginning to brown.
3 Reduce the heat to medium-low and pour the egg substitute over the ham. Without stirring, cook 3-4 minutes until the eggs are partially set. Stirring gently in order to scramble, continue cooking for 1-2 minutes until the eggs are nearly set.
4 Sprinkle the cheese over the eggs and cook, stirring gently, for 1 minute until the eggs are cooked but not dry and the cheese is melted.
5 While the eggs cook, warm the tortillas according to the package instructions.
6 Arrange the warm tortillas on a flat surface. Place one quarter of the egg mixture along the right side of each tortilla, stopping shortly before the bottom. If desired, top the eggs with Picante Sauce.
7 Fold up the bottom edge of the tortilla (about 1 inch).
8 Beginning at the right edge, roll each tortilla up jellyroll style. Serve hot.
Additional Information
Folding the bottom of the tortilla before wrapping will prevent the filling from falling out.
