Ingredients
0.25 cup packed dark brown sugar
2 tbsp white wine (dry)
2 tbsp low sodium soy sauce
2 tbsp unsalted butter (or margarine)
1 tbsp fresh lemon juice
1 salmon fillet , with skin (about 2 lb.; or use salmon steaks)


Directions
1 Mix together brown sugar, wine, soy sauce, butter, and lemon juice in a microwave safe bowl. Microwave on high 2 minutes or until boiling. Stir and let stand 10 to 15 minutes.
2 Wash and dry salmon and place, flesh side down in brown sugar mixture. Wrap with plastic wrap and let marinate in refrigerator for at least 1 hour or up to 1 day.
3 Preheat grill.
4 Take salmon out of marinade and let drain, save marinade. Place fish, flesh side up on a piece of heavy-duty aluminum foil. Cut foil to form the outline of the fish.
5 Move fish on foil to a grill rack. Lower lid on grill and cook 20 to 25 minutes or until fish is flaky. Move fish to a serving platter.
6 Place marinade back in microwave oven and heat 1 to 2 minutes, stir and serve with fish.
Additional Information
Instead of a fillet, you can use salmon steaks. If marinating salmon (through step 2) up to 1 day ahead, chill airtight. If time is short, use the marinade as a sauce instead; heat and spoon over cooked salmon.
