2 cup oat bran
2 tsp low sodium baking powder
0.25 tsp baking soda
1 tsp ground cinnamon
0.25 cup packed dark brown sugar
0.5 cup Yogurt, vanilla, low fat
0.5 cup apple juice
0.5 cup liquid egg substitute , lightly beaten (or 2 large eggs plus 1 egg white)
2 tbsp canola oil (or walnut oil)
1 medium apples , peeled and finely chopped
0.5 cup chopped walnuts , pecans, dried cranberries, or dark raisins, chopped


Directions
1 Preheat the oven to 350 degrees Fahrenheit.
2 Mix the oat bran, baking powder, baking soda, and cinnamon in a large bowl. Stir well. Mix in the brown sugar, using the back of a wooden spoon to break up sugar clumps.
3 Mix the yogurt, apple juice, egg substitute or eggs, and oil in a small bowl. Stir well.
4 Add the yogurt mixture to the oat bran mixture and stir well. Fold in the apples and if desired, the nuts or dried fruit.
5 Coat only the bottoms of muffin cups with nonstick cooking spray and fill 3/4 full with batter. Bake for about 16 minutes until a toothpick inserted into the center of a muffin comes out clean.
6 Allow muffins to cool for 5 minutes while still in muffin tin before removing and serving.
Additional Information
The oat bran is a great, healthy flour replacement.
