Ingredients
1 lb raw medium shrimp , peeled and deveined
1 medium onions , chopped
0.5 cup white wine (dry)
2 tbsp fresh lemon juice
2 tbsp olive oil , divided
3 scallions , trimmed and chopped
6 medium garlic cloves , chopped
1 tbsp fresh ginger root , minced
2 whole jalapeno pepper , seeded and chopped
0.25 tsp ground coriander
0.25 tsp ground cumin
0.25 tsp dry mustard
3 fresh tomatoes , peeled, seeded, and chopped
1 tsp brown sugar
1 tbsp red wine vinegar


Directions
1 Place the shrimp in a bowl with the onion, wine, lemon juice, and 1 tablespoon of the oil. Marinate in refrigerator for one hour.
2 While shrimp is marinating, heat 1 tablespoon of oil in a large skillet over medium high heat. Add the scallions, garlic, ginger, and jalapeno. Cook for 2 minutes, stirring constantly.
3 Add the coriander, cumin, and mustard, stir and cook an additional 1 minute.
4 Add the tomatoes and cook another 1 minute, stirring constantly. Remove from heat and add the brown sugar and vinegar. Stir, move sauce to a bowl, and let cool.
5 Preheat broiler.
6 Thread shrimp onto 4 skewers and broil until opaque (approximately 3 minutes). Serve the shrimp with sauce.
Additional Information
Be sure to wash your hands after handling jalapeno peppers.
