Servings
Ingredients
1.5 lb salmon fillet
2 tsp olive oil
2 tbsp fresh lemon juice
2 tsp olive oil
1 medium onions , minced
12 oz roasted red peppers with brine , drained and chopped
3 tbsp Milk, evaporated, nonfat/skim
2 tsp fresh oregano , minced (or 1 teaspoon dried)
1 pinch salt
1 pinch black pepper (fresh ground )


Directions
1 Whisk together olive oil and lemon juice. Coat salmon fillets on both sides with mixture. Set the salmon aside at room temperature for 10 minutes.
2 Preheat broiler.
3 Pour oil in a small skillet and heat over medium-high heat. Cook the onion in the oil for 5 minutes or until tender.
4 Using a blender or food processor pulse the onions and red peppers. Pour in the milk and oregano and sprinkle with salt and pepper. Blend until fully combined.
5 Lay the salmon under the broiler, at least 6 inches from the heat. Cook salmon until it flakes, about 10 minutes.
6 Warm the sauce in a small pot. Serve sauce over top of salmon or on the side.
Additional Information
This also works well with any fish or even chicken.
