Ingredients
2 tbsp fresh chopped green onion
1 oz olive oil cooking spray
1 tbsp balsamic vinegar
2 medium garlic cloves , minced
1 pinch hot red pepper flakes
1 whole eggplant (about 1 pound)
0.33 cup part skim shredded mozzarella
1 tsp ground oregano , or 1 tablespoon snipped fresh oregano


Directions
1 Preheat broiler. Combine in a small bowl the green onion, oil, vinegar, garlic, and crushed red pepper. Set aside.
2 Cut eggplant crosswise into 16 slices (about 1/2 inch thick). Place eggplant on the unheated rack of a broiler pan. Broil 4 to 5 inches from the heat for 8 to 10 minutes or until tender, turning and brushing once with green onion mixture halfway through broiling.
3 Sprinkle eggplant with mozzarella cheese, and if using, dried oregano. Broil for 1 additional minute. Sprinkle with fresh oregano, if using.

A great side dish that is low in fat and carbohydrates.
