Ingredients
2 boneless skinless chicken breasts
2 tbsp canola oil , divided
2 small onions , sliced
2 cup fresh broccoli florets
1 medium tomatoes , cut into wedges
1 pinch salt
1 pinch black pepper


Directions
1 Cut chicken into bite-size pieces and toss with 1 tablespoon oil.
2 Add to large skillet, cook over high heat, stirring frequently, 5 minutes or until just tender.
3 Reduce heat to medium. Add remaining oil and onion, cook 2 minutes.
4 Add broccoli and tomato. Sprinkle with salt and pepper.
5 Cover and cook 4 minutes or until vegetables are crisp, but tender.
