Ingredients
1 lb Broccoli, fresh , cut into 1 inch pieces, cooked until tender
0.5 cup fat free sour cream
0.25 cup reduced fat grated parmesan cheese
2 tsp fresh lemon juice , or more, to taste
0.5 tsp tarragon, leaves, ground
0.5 tsp ground basil leaves
0.25 tsp ground thyme
1 pinch salt and pepper
3 eggs
2 egg whites


Directions
1 Using a food processor or blender, puree broccoli until smooth. Blend in sour cream, lemon juice, tarragon, basil and thyme. Sprinkle with salt and pepper. Blend in eggs and egg whites.
2 Spoon mixture into a greased loaf pan. Move loaf pan into a roasting pan and pour 2 inches of water into it. Bake, covered with aluminum foil about 1 hour. Let loaf cool. Chill 3 to 4 hours and serve.
Additional Information
Serve this with an herbed mayonnaise or tomato sauce.
