Servings
Ingredients
1 lb Broccoli Rabe, fresh , trimmed
1 medium lemons , halved
1 tbsp olive oil
1 tbsp Butter, unsalted
2 medium garlic cloves , thinly sliced
0.33 pitted calamata olives , pitted and roughly chopped (green olives preferred)
0.25 tsp kosher salt
0.12 tsp black pepper , freshly ground


Directions
1 Fill a large pot with water and a dash of salt and bring to a boil. Put the broccoli rabe in the pot and cook about 3 minutes or until tender. Strain broccoli rabe.
2 In the mean time, place lemon halves under broiler and broil about 5 minutes or until slightly charred. Take lemons away from heat and let cool.
3 In a large skillet, combine the oil and butter and heat over medium heat. Mix in the garlic and cook another 2 minutes. Take 1 lemon half and squeeze the juice over the skillet.
4 Stir in the broccoli rabe, olives, salt, and pepper and continue to cook for 2 minutes. Everything should be heated through. Spoon broccoli rabe mixture into serving bowl and serve other lemon half, cut into wedges, alongside.
Additional Information
Try this with broccoli florets or zucchini or mix a bunch of vegetables together. Serve this as a topper for fish or chicken or on its own.
