Ingredients

1 medium potatoes , cut into 1" cubes
14 oz low sodium chicken broth
4 cup fresh broccoli florets
1.5 cup whole milk
0.5 cup sour cream , divided
4 oz shredded cheddar cheese
1 tbsp fresh chives


Directions

1 In large saucepan, combine potatoes and broth. Bring to boil, reduce heat and simmer for 5-8 minutes until potatoes are soft.
2 In separate saucepan, steam broccoli 4-5 minutes until bright green and slightly soft.
3 In blender or food processor, add potatoes, broth and broccoli. Blend until smooth. Return to saucepan.
4 Add milk, 1/4 cup sour cream and cheese. Stir until cheese melts and soup is well heated.
5 Serve in individual bowls, topped with teaspoon of sour cream and sprinkle of chives.
