Ingredients
4 cup fresh broccoli florets
0.25 cup cold water
1 cooking spray
1 medium onions , chopped
0.67 cup white all purpose flour
1.5 cup fat free milk
29 floz low sodium vegetable broth (or low-sodium, fat-free chicken broth)
1 cup Cheese, colby & monterey jack, reduced fat, shredded
1 pinch salt and pepper , to taste
0.12 tsp ground thyme


Directions
1 Place the broccoli and water in a microwave-safe dish. Microwave, covered, for 5 to 8 minutes, or until tender. Drain and set aside.
2 In a large pot coated with nonstick cooking spray, sauté the onion over medium heat until softened, about 3 to 5 minutes.
3 In a small bowl, combine the flour and milk. Stir the flour and milk mixture into the onion.
4 Gradually add the vegetable broth and the broccoli. stirring to combine. Cook over medium heat until the mixture comes to a boil, stirring constantly, for 5 minutes or until it is thickened.
5 Add cheese, thyme, and salt and pepper to taste. Cook and stir just until cheese is melted. Serve hot.
