1 olive oil cooking spray
1 tsp olive oil
1 lb fresh mushrooms , stems removed (shitake)
2 large shallots , peeled and minced
2 medium garlic cloves , peeled and minced
1 tbsp fresh thyme (or 1 tsp dried)
3 tbsp balsamic vinegar
4 Fish, cod, Pacific, fillet, raw , center cut fillets (4 oz each filet)
0.12 tsp kosher salt (optional)
1 pinch black pepper


Directions
1 Heat a large nonstick skillet over medium high heat. Coat with cooking spray and olive oil.
2 Cook the mushrooms, stirring until softened and liquid has evaporated. Add the shallot, garlic, thyme, and 2 tablespoons vinegar. Cook another 2 minutes, stirring constantly.
3 Push the vegetables to the side of the skillet. Add the cod fillets, searing both sides until brown, adding additional cooking spray to prevent sticking.
4 Cover and cook over medium heat for 8 minutes, until the fish flakes with a fork.
5 To serve, transfer to a serving plate. Top with mushrooms and serve immediately. Sprinkle with remaining tablespoon of vinegar, salt, and pepper to taste.
