Ingredients
1 cooking spray
1 small onions , finely chopped
0.25 cup sliced carrots , thinly sliced
0.25 cup fresh chopped celery , thinly sliced
3 medium garlic cloves , minced
0.5 tsp oregano leaves
0.5 tsp tarragon, leaves, ground
0.5 tsp ground thyme
0.12 tsp ground nutmeg
8 oz tomato sauce, low sodium
8 oz Tomatoes, whole, peeled, unsalted, canned , drained, chopped
0.25 cup white wine (or tomato juice)
8 oz Vegetarian Meat, beef, ground , thawed
1 pinch salt
1 pinch black pepper


Directions
1 Coat a medium pot with cooking spray and heat over medium heat. Cook onion, carrot, celery, and garlic 5 minutes or until soft. Mix in oregano, tarragon, thyme, and nutmeg and cook 1 to 2 more minutes.
2 Stir in tomato sauce, tomatoes, wine, and protein crumbles. Bring to a boil. Lower heat and simmer 15 minutes, stirring often. Sprinkle with salt and pepper.
Additional Information
Serve this thick sauce with an equally thick pasta such as spaghetti or farfalle.
