Ingredients
1 medium onions , finely chopped (1/2 cup)
1 medium celery stalk , finely chopped (1/2 cup)
1 medium carrots , finely chopped (3/4 cup)
2 tbsp olive oil
1 lb extra lean ground beef (5% fat)
0.5 lb ground pork
1 cup fat free milk
6 oz tomato paste
10.5 cup canned unsalted diced tomatoes
4 tsp kosher salt
0.5 tsp ground nutmeg


Directions
1 Sauté onion, celery, carrot, and oil in a frying pan over medium heat for 10 minutes.
2 Mix in meat, and cook until it is no longer pink. Pour in milk, and cook over high heat until all milk has been absorbed. Pour mixture into a 4 to 6 quart slow cooker.
3 Heat tomato paste in frying pan over low heat for 5 minutes, then add to the slow cooker with the diced tomatoes, salt, and nutmeg.
4 Simmer on low, covered for 8 hours or high for 4 hours.
