Ingredients
1 cup low fat buttermilk
0.25 cup honey
2 tbsp canola oil
2 egg whites , lightly beaten
1 cup Oats, rolled, baked value
1 cup oat bran
0.5 cup Flour, all purpose, unbleached, enriched
2 tsp low sodium baking powder
1 pinch salt
1.5 cup Blueberries, fresh (or unsweetened, frozen berries, thawed)
1 cooking spray


Directions
1 Preheat oven to 375 degrees F.
2 Line muffin tin(s) with paper cups, or spray with cooking spray.
3 Mix together buttermilk, honey, oil, and egg whites in small bowl.
4 In large bowl, combine oats, oat bran, flour, baking powder, and salt. Make a well in center of dry ingredients. Pour in milk mixture and blueberries. Stir until combined, being careful not to overmix.
5 Pour batter into muffin cups and bake for 25 minutes, or until a toothpick inserted into center comes out clean.
Additional Information
Use fresh or frozen blueberries to make these muffins year-round.They are loaded with fiber-rich bran and oats, as well as blueberries, a wonderful source of antioxidants.
