Directions
1 Preheat the oven to 350 degrees F. Spray a 6-inch round baking pan with the cooking spray. Place the blueberries in the pan and season with 1 teaspoon of orange zest.
2 Mix together the sugar and oil in a bowl. Add the egg and whisk until mixture reaches a thick and smooth consistency.
3 Sift the flour, baking powder, and salt together. Combine with the egg mixture. Add the milk and mix well. Add 1 teaspoon orange zest and stir to mix.
4 Pour the mixture evenly over the blueberries. Bake for approximately 20 to 25 minutes. Let cool before serving.
Additional Information
If desired, 2 tablespoons "measures-like-sugar" Splenda can be substituted for the sugar.
