Ingredients
1.5 oz dried shiitake mushrooms
1 oz dried cloud ear mushrooms
2 cup cold water , boiling
0.25 cup fresh chopped onion
2 oz fresh green onions (equal to 1/4 cup)
5 cup canned mushroom stock
3 cup crimini mushrooms
1 pinch salt and pepper , to taste


Directions
1 Place dried mushrooms in bowl; add boiling water. Let stand until mushrooms are softened, about 15 minutes. Drain, reserving liquid. Slice mushrooms, discarding tough stems from black mushrooms.
2 In a lightly greased saucepan, saute onion until tender, about 5 minutes. Add dried mushrooms, reserved liquid and stock; heat to boiling. Reduce heat and simmer, covered 20 minutes, adding cremini mushrooms during last 10 minutes.
3 Season to taste with salt and white pepper.
