Ingredients
2 tsp olive oil
1 medium onions , chopped, or 3/4 cup frozen chopped onion
3 medium garlic cloves , minced
1 lb whole loin pork chops , boneless and trimmed, cut into 1/2" cubes
2 tbsp chili powder
1 tsp ground cumin
1 tsp ground cinnamon
1 whole pickled jalapeno peppers , seeded and minced
1.5 cup cold water
15 oz canned black beans , drained and rinsed
1 oz Grits, corn, serving , approximately 2 tablespoons
0.25 cup fresh cilantro , chopped
1 tbsp fresh lime juice


Directions
1 Heat oil in a large saucepan over medium heat. Add garlic and onion cooking for about 2 minutes until soft. Add the pork and cook for about 4 minutes.
2 Add cumin, chili powder, cinnamon, and jalapeno and cook for about 20 seconds.
3 Pour in water and beans bringing to a boil for about 15 minutes then reduce to low heat. Simmer for about 15 minutes.
4 Stir in grits and cook for about 15 minutes. Then add cilantro and lime juice.
Additional Information
This recipe contains canned beans. The nutrition facts given will be slightly inaccurate, because the analysis includes the salted water in which these beans are canned. When you drain and rinse these beans, you reduce the sodium content by about 40 percent.
