Ingredients
2 tsp ground cumin
2 tbsp fresh lemon juice
1 tbsp vegetable oil
1 tsp white wine vinegar
0.25 tsp salt
6 oz Beans, black, mature, cooked , rinsed and drained
0.5 cup chopped red bell peppers , finely diced
0.5 cup fresh cilantro , chopped
2 tbsp fresh chopped red onion


Directions
1 Heat cumin for 1 minute in a small skillet, stirring constantly.
2 Transfer to a large bowl and add lemon juice, oil, vinegar, and salt. Bend with a wire whisk until smooth.
3 Add beans, red pepper, cilantro, and red onion. Toss to combine.
Additional Information
Goes great on mixed greens for a Mexican -inspired dinner.
