Servings
Ingredients
15 oz low sodium canned black beans , rinsed and drained
1 cup frozen sweet corn kernels , thawed
6 oz roasted red peppers with brine , drained, cut into thin strips or coarsely chopped
0.5 cup fresh chopped red onion , divided (or yellow)
0.33 cup Salsa, chipotle, medium (regular salsa may also be used)
2 tbsp cider vinegar
2 oz low moisture, part skim mozzarella cheese , cut into 1/4-inch cubes


Directions
1 In a medium bowl place all of the ingredients except for the cheese and 1 tablespoon onion.
2 Toss ingredients gently until combined. Let stand for 15 minutes to blend flavors.
3 Just before serving, gently fold in all but 2 tablespoons of cheese, then top with the remaining cheese and onion.
