Ingredients
16 oz canned black beans, drained
16 oz cooked drained lima beans (or butter beans)
1 medium garlic cloves , minced
1 tsp ground cumin
2 tbsp tahini (sesame seed paste*)
1 tbsp fresh lemon juice
4 tbsp olive oil
1 pinch salt and pepper , to taste
1 oz fresh cilantro , to garnish


Directions
1 Place all the ingredients except salt, pepper, and cilantro in food processor bowl; blend together well.
2 Season to taste with salt and pepper; cover and chill. Garnish with cilantro and serve with crudites and crackers. Makes about 3 cups.
Additional Information
*Tahini can be found in the Asian foods section of the grocery store, or you cake your own inexpensive tahini by pureeing toasted sesame seeds with peanut or canola oil until it reaches a peanut butter consistency. Serve this hummus with raw veggie dippers and whole grain crackers or crispbreads.
