2 egg whites , slightly beaten
1 eggs , slightly beaten
3 tbsp sugar
1 tbsp honey
1 tbsp Liqueur, cherry brandy/cordial, INTL (may substitute any fruit-flavored liqueur, or 1/2 tsp. rum extract plus 2 Tbsp. orange juice)
0.5 tsp vanilla extract
1 Salt, table, dash serving
0.75 cup plain nonfat yogurt
0.5 cup white all purpose flour
3 cup Raspberries, fresh (may also use blueberries, and/or sliced strawberries)
2 tsp powdered sugar


Directions
1 In a large mixing bowl combine egg whites, whole egg, granulated sugar, honey, liqueur, vanilla, and salt. Beat with a wire whisk or an electric mixer on low speed until light and frothy.
2 Stir in yogurt until mixture is smooth. Add flour; beat until mixture is smooth.
3 Grease six 6-ounce individual quiche dishes. Arrange berries in the bottoms of dishes. Spoon batter over berries. Batter will not cover berries completely.
4 Bake in a 375-degree oven for 20 to 25 minutes or until centers appear set when shaken. Cool on a wire rack for 30 minutes.
5 Just before serving, if desired, sprinkle desserts with powdered sugar.
Additional Information
An excellent way to use berries. Cherries are the classic fruit choice but are by no means the only option. Use berries, as we did, or chopped peaches, plums, or pears.
