Benne seed (a synonym for sesame seed) wafers are both sweet and savory. This sweet version uses brown sugar.

Ingredients
1 cup sesame seeds
1 cup packed brown sugar
4 tbsp unsalted butter , room temperature
1 eggs , lightly beaten
0.5 cup white all purpose flour
0.25 tsp salt
0.12 tsp low sodium baking powder
1 tsp fresh lemon juice
0.5 tsp vanilla extract
1 cooking spray


Directions
1 Preheat oven to 325 degrees F. Spray 2 baking sheets with vegetable spray and set aside.
2 In a heavy, medium-sized skillet, toast the sesame seeds over moderate heat until they are golden brown, watching to be sure they don't burn.
3 Cream the brown sugar and butter together in a medium-sized bowl.
4 Add the egg, flour, salt, and baking powder. Blend to form a soft dough. Stir in the toasted sesame seeds, lemon juice, and vanilla extract; mix well.
5 Drop the dough onto 2 prepared baking sheets by the teaspoonful, leaving space between each for the cookies to spread.
6 Bake cookies for 15 minutes, or until they are slightly brown at the edges. Let them cool briefly on the baking sheets, then transfer them to a rack to cool completely.
