Ingredients
1 butter flavored cooking spray
0.33 cup fresh chopped onion , finely
2 medium garlic cloves , minced
0.33 cup fat free sour cream
2 tbsp dijon mustard
2 tsp fresh lemon juice
1 pinch kosher salt (to taste)
1 pinch black pepper
1.5 lb Beets, cooked, drained, whole, 2" , cubed or sliced, warm
1 tsp chopped parsley , minced


Directions
1 Heat a cooking spray coated pot over medium heat. Cook onion and garlic 3 to 4 minutes or until soft. Mix in sour cream, mustard, and lemon juice and heat over low heat until warmed through. Sprinkle with salt and pepper.
2 When ready to serve, spoon sauce over beets and top with parsley.
Additional Information
The best way to cook beets is with the skins on. After cooking, the skins come off easily.
