6 Tortilla, flour, ready to bake, 6"
12 oz extra lean ground beef (5% fat)
0.5 cup fresh chopped onion (1 medium)
2 medium garlic cloves , minced
0.5 cup chopped green bell peppers , chopped
0.5 cup Salsa (see instructions below to make your own)
2 tsp Seasoning, Mexican
1.5 cup Lettuce, iceberg , shredded
2 fresh tomatoes , chopped
0.5 cup Cheese, colby & monterey jack, reduced fat, shredded
2 tbsp Cheese, colby & monterey jack, reduced fat, shredded

Easy Fresh Salsa
2 fresh tomatoes , seeded and chopped
0.25 cup fresh chopped red onion
0.25 cup chopped green bell peppers, stir fried (yellow or green peppers)
2 tsp fresh cilantro , snipped
1 tsp garlic cloves, chopped (about 1 clove)
1 pinch black pepper
1 cup tabasco sauce , a few drops (optional)
1 pinch salt


Directions
1 Wrap tortillas in foil, place in a 350 degree oven for approximately 10 minutes or until warmed.
2 In a large skillet, cook ground beef, onion, and garlic over medium-high heat until beef is brown and onion is tender. Drain off fat. Stir in sweet pepper, 1/2 cup Easy Fresh Salsa (or bottled salsa), and taco seasoning. Bring to boiling, reduce heat. Simmer, covered, for 10 minutes
3 Top each tortilla with about 1/2 cup of the beef mixture and some of the lettuce and tomatoes. Sprinkle with some of the 1/2 cup cheese. Fold in sides, roll up. Cut in half to serve.
4 If desired, sprinkle with additional cheese.
Easy Fresh Salsa
1 Combine tomatoes, onion, sweet pepper, cilantro, garlic, black pepper in a medium bowl. If desired, add hot pepper sauce. Season to taste with salt. Serve immediately or cover and chill for up to 3 days. Stir before serving. Makes approximately 1 2/3 cup.
