Ingredients
6 piece Tomatoes, sun dried, halves (not packed in oil)
1 medium tomatoes , coarsely chopped (about 1 cup)
1 medium garlic cloves , minced or pressed
1 cup fresh basil , coarsely chopped and loosely packed
0.25 cup cold water
2 tbsp balsamic vinegar
0.25 tsp salt (or to taste)


Directions
1 Cover the sun-dried tomatoes with boiling water in a heatproof bowl and set aside. Combine the chopped fresh tomatoes, garlic, basil, cup water, vinegar, and salt in a blender or food processor.
2 When the sun-dried tomatoes have softened, drain and add them to the other ingredients. Puree the mixture until smooth.
Additional Information
Covered and refrigerated, this dressing will keep for about a week. Tastes great on mixed greens.
