1 Trim any excess fat from the brisket, and season the brisket with the salt and pepper. 2 In a small bowl, combine the honey, vinegar, lite soy, tomatoes, and chipotle. Spread over the brisket. Cover, and refrigerate overnight. 3 Preheat the oven to 300 degrees F, and place the brisket and marinade in the oven in a heavy pot. Bake, covered, for 5 to 6 hours, or until the brisket is tender. Generously sprinkle with freshly chopped cilantro and serve.
