Ingredients

5 lb Beef, brisket, whole, lean, raw , trimmed
1 pinch salt and pepper , to taste
3 tbsp garlic cloves, chopped , roasted
0.25 cup light honey
0.25 cup Vinegar, malt, ale
0.25 cup light soy sauce
2 cup drained canned tomatoes , chopped
1 cup Chile Peppers, California, dried , Chipotle, seeded and finely diced
0.25 cup fresh cilantro , chopped


Directions

1 Trim any excess fat from the brisket, and season the brisket with the salt and pepper.
2 In a small bowl, combine the honey, vinegar, lite soy, tomatoes, and chipotle. Spread over the brisket. Cover, and refrigerate overnight.
3 Preheat the oven to 300 degrees F, and place the brisket and marinade in the oven in a heavy pot. Bake, covered, for 5 to 6 hours, or until the brisket is tender. Generously sprinkle with freshly chopped cilantro and serve.


Additional Information
You just put it in the oven, forget about it, and return to a tender, tasty brisket. It's a great dish! Important note: The nutritional analysis for this recipe includes the marinade, so the actual numbers for the consumed portion of this dish will be lower.
