Ingredients
2 Banana, medium, fresh , peeled
0.25 cup sugar
0.5 cup packed light brown sugar
0.25 cup canola oil
2 eggs
1 tsp vanilla extract
1 cup white all purpose flour
0.25 tsp baking soda
0.5 tsp low sodium baking powder
0.25 cup low fat buttermilk
1 cup Cranberries, dried (or 1 cup chopped fresh cranberries)
1 tsp grated orange peel


Directions
1 Preheat oven to 350ºF, and coat a 9x5x3-inch loaf pan with nonstick cooking spray.
2 In a large bowl beat the bananas until pureed. Add sugar, brown sugar, canola oil, eggs, vanilla, and continue beating until creamy.
3 In a separate small bowl mix the flour, baking soda, and baking powder. Stir the flour mixture alternately with the buttermilk into the banana mixture, beginning and ending with the flour, combining only until mixed.
4 Stir in the dried cranberries and orange rind. Pour batter into the prepared pan, and bake for 40 minutes to 45 minutes, or until a toothpick inserted comes out clean. Let cool in pan.
Additional Information
Use overripe bananas with tart cranberries for this wonderful, and good tasting bread.
