Ingredients
4 medium garlic cloves , minced
0.25 cup fresh basil , minced
2 tbsp extra virgin olive oil
0.25 cup balsamic vinegar
1 tbsp SPLENDA® No Calorie Sweetener, granulated
4 fresh tomatoes , thinly sliced
2 medium cucumber , coarsely chopped (or 1 English cucumber)
1 pinch black pepper (to taste)


Directions
1 In shallow glass dish, combine garlic, basil, oil, vinegar, and SPLENDA® or other sugar substitute.
2 Add tomato slices, toss lightly to coat. Marinate at room temperature 1 hour, stirring and turning once.
3 Place cucumbers in serving dish. Salt and pepper to taste. Top with marinated tomatoes.
