Ingredients
6 boneless skinless chicken breasts (6 halves)
1.5 tsp fresh rosemary , minced (or 1/2 tsp dried rosemary)
2 medium garlic cloves , minced
0.75 tsp black pepper
0.5 tsp salt
1 tbsp olive oil
0.25 cup balsamic vinegar
1 cooking spray


Directions
1 Rinse chicken and pat dry.
2 In small bowl, combine rosemary, garlic, pepper, and salt.
3 Place chicken in large bowl and drizzle with oil.
4 Rub chicken with spice mixture, cover and refrigerate overnight.
5 Preheat oven to 400°F.
6 Coat heavy roasting pan or iron skillet with cooking spray. Place chicken in prepared pan and bake 10 minutes.
7 Turn chicken. If drippings begin to stick to pan, add 3 to 4 tbsp water and deglaze.
8 Bake chicken another 10 minutes, until outside is golden-brown and center is no longer pink.
9 If pan is dry, stir in another 1 to 2 tablespoons water to loosen drippings.
10 Drizzle balsamic vinegar over chicken in pan. Transfer chicken to plates. Stir liquid in pan and drizzle over chicken.
