4 boneless skinless chicken breasts , halves
2 tsp extra virgin olive oil
8 oz fresh mushrooms , quartered
2 medium garlic cloves , minced
0.5 cup low sodium chicken broth
2.5 tbsp balsamic vinegar
0.25 tsp ground thyme , crushed
0.12 tsp black pepper , freshly ground
1 pinch chopped parsley , optional (for garnish)


Directions
1 Cook chicken on a nonstick skillet (sprayed with cooking spray) over medium heat until golden brown.
2 Remove the chicken and keep warm. In the skillet, sauté the garlic and mushrooms in the oil for about 3 minutes.
3 Put the chicken back into the skillet. Add the chicken broth, thyme, pepper, and vinegar. Let simmer for 15 minutes on low heat until the chicken juices are clear.
