1 In a medium size bowl, combine stuffing cubes, Parmesan cheese, onions, garlic, and nutmeg. Mix in spinach, broth, and margarine; season to taste with salt and pepper. Mix in egg whites.
2 Shape mixture into 24 balls. Bake at 350 degrees F on greased jelly roll pan until spinach balls are browned, about 15 minutes. Serve with Mustard Sauce (sour cream, honey, chopped chives, and dijon mustard).
