Ingredients
3 fresh whole beets , tops cut off, peeled and cut into matchstick-thin strips
3 tbsp seasoned rice vinegar (divided)
2 tsp soy sauce (divided)
0.5 tsp sesame oil (divided)
6 oz fresh baby spinach
1 tbsp sesame seeds , toasted


Directions
1 Mix uncooked beet sticks in a mixing bowl with 1 tablespoon rice vinegar, 1 teaspoon soy sauce, and 1/4 teaspoon sesame oil. Let stand at room temperature 15 minutes or up to 2 hours to marinate.
2 When ready to serve, toss spinach in a large salad bowl with remaining rice vinegar, soy sauce, and sesame oil. Top spinach with beets and their marinade; sprinkle with sesame seeds.
Additional Information
Be certain to allow enough time for beets to fully marinate.
