Ingredients
3 piece Bacon, cured, pan fried , cooked crisp, chopped
0.25 cup chopped tomato , small dice
0.25 cup Lettuce, cos, fresh, shredded
0.5 cup fresh baby spinach (finely chopped)
1.5 tbsp fat free mayonnaise
1 pinch salt
0.25 tsp black pepper
1 Cucumber, fresh, medium
1 pinch chopped parsley


Directions
1 Combine bacon, tomato and greens with mayonnaise. Season with pepper; set aside.
2 Peel cucumber. Trim off ends, and slice in half lengthwise. Use a spoon to scoop out seeds; discard. Place cucumber in a glass dish. Divide BLT mixture between segments, mounding in hollowed areas. Sprinkle with minced parsley or green onion, if desired. Slice into 2-inch pieces.

You may make these up to 12 hours ahead of time and chill until serving.
