Ingredients
3 medium pears , very ripe, peeled and coarsely chopped (Bosc or Bartlett)
2 cup apple juice
1 oz fresh ginger root , 1-inch piece, peeled and sliced thin
8 oz pear juice
2 tbsp chopped hazelnuts , toasted, as garnish


Directions
1 Bring the pears, apple juice, and ginger to a boil in a large pot.
2 Lower heat, cover, and simmer until the pears are tender, about 5 minutes.
3 Remove the mixture, in batches, into a blender and puree.
4 Return puree to pot and stir in the pear juice. Warm over low heat and serve topped with hazelnuts.


Additional Information
This soup can also be served chilled.
