Fried Noodles
1 oz wonton wrappers
3 cup peanut oil

Stir Fried Asparagus
0.5 tsp salt (optional)
1 tsp black pepper
1 tsp sugar
2 tbsp cooking sherry
3 tbsp low sodium soy sauce
4 tbsp oyster sauce
1 lb fresh asparagus , trimmed and cut into 1" pieces
2 tsp sesame oil
4 tbsp toasted sesame seeds


Directions
Fried Noodles
1 Cut 3 ounces of wonton wrappers into thin strips.
2 In wok or large frying pan add 3 cups of peanut oil. Heat oil on medium high to 350°F.
3 Add the wonton stips to the oil, small bunches at a time. Remove with slotted spoon when they float to top and have turned golden brown.
4 Drain on paper towels, and set aside.
5 Set pan with oil aside to cool.
Stir Fried Asparagus
1 In separate wok or large frying pan, add salt, pepper, sugar, cooking sherry, soy sauce, and oyster sauce.
2 Heat over medium high to boil. Add asparagus.
3 Stir fry for 2-3 minutes. Add sesame oil and toss.
4 Divide asparagus between eight bowls.
5 Top with fried wonton wrappers and toasted sesame seeds. Serve immediately.
