1 lb fresh asparagus , trimmed and cut into 1 inch pieces
0.33 cup fresh chopped onion
1 medium garlic cloves
0.33 cup chopped tomato , seeded
2 tbsp light mayonnaise
1 tbsp fresh lemon juice
0.5 tsp salt
0.75 tsp fresh cilantro , minced
0.25 tsp chili powder
6 pinch hot pepper sauce (optional to taste)


Directions
1 Blanch asparagus in water for 5 minutes or until tender. Strain and put asparagus in a food processor or blender. Puree asparagus with onion and garlic until smooth.
2 Mix together tomato, mayonnaise, lemon juice, salt, cilantro, chili powder, and hot pepper sauce. Add in asparagus mixture and stir until combined. Serve.
Additional Information
This is great with fresh vegetables or tortilla chips.
